Two-Ingredient Banana Oat Bites

Soft banana slices coated in oats and gently cooked in a little unsalted butter.

Ingredients
  

  • 2 Bananas (very ripe)
  • 6 tbsp Rolled Oats
  • 1 tsp Butter (unsalted)

Method
 

  1. Peel the bananas and cut them into slices approximately 2 cm thick.
  2. Place a non-stick frying pan over low to medium-low heat. Add the unsalted butter and allow it to melt, coating the base of the pan lightly.
  3. Place the banana slices in the pan in a single layer. Allow them to cook gently for approximately one to two minutes, until they begin to soften. Avoid cooking them over high heat, as ripe bananas can burn quickly.
  4. Sprinkle the oats evenly over and around the banana slices.
  5. Gently shake and swirl the pan so that the oats begin to stick to the softened bananas.
  6. Use a wooden spoon or silicone spatula to turn the pieces carefully, incorporating the loose oats as you go.
  7. As the bananas soften, the oats will naturally cling to them and form small, rustic bites.
  8. Continue cooking for approximately four to six minutes, turning gently, until the oats have softened and the outside is lightly golden.
  9. Remove the bites from the pan and allow them to cool before serving. They will become slightly firmer as they cool.
